Recipe: A Toast To The Weekend!

What are you up to this weekend? We’re spending time with our new friends in Hong Kong and exploring the city some more. But first, there will be toast!
Today’s toast recipe is my own creation and new obsession: toast with apricot jam and thin slices of brie. It’s ridiculously easy to make and incredibly delicious — what could be better? Be sure to spread the brie on when the toast is right out of the toaster so that it begins to melt. I use a very thin layer of apricot jam because the Bonne Maman version I have is pretty sweet.
If you want to upgrade the whole situation, you could make your own apricot jam (and control the level of sweetness). Here’s a good recipe from Martha Stewart.
