Recipe: A Toast To The Weekend!
Happy Friday, everyone!
What are you up to this weekend? We’re heading to Shenzen with our new friends who founded the startup Revols, and went to an incubator program there. But before we put our new China visa to use, there will be toast!
Now that it’s officially November and Thanksgiving is fast-approaching, this week’s recipe is dedicated to the newest of toast fads: sweet potato toast — as in you use a slice of sweet potato instead of a slice of bread as the base, and then add your favorite toppings.
As a bread lover, I vehemently oppose using anything but bread as toast. But I’m open to trying a sweet potato version once.
This article from MindBodyGreen includes a few recipes that look pretty delicious. The one that caught my eye featured spreading peanut butter over the potato slice and topping it with pomegranate seeds. Pick your favorite and let me know your thoughts!
